Rainbow Smoothie

You may have heard that you should eat like the rainbow?

There is actually a lot of truth behind that. The more colorful we eat, the higher the chance is that we get all the different antioxidants there are in foods, as different antioxidants are found in different colored foods. For instance, the antioxidants found in carrots, are not the same as in tomato, or in blueberries or in spinach.

 

This smoothie is giving you a little bit from each color group; some green veggies, some blue and red berries, some orange and yellows fruits, and together with a nut milk or soy milk, you will have a perfect rainbow smoothie! :) 

 

This serving makes 2 large smoothies (or 4 small)  

  • 1 avocado

  • 1 cup frozen mixed berries (2.5dl)

  • ½ banana

  • 1 orange

  • 1 cup kale (2.5dl)

  • 1 ¼ cup soy milk or any nut milk (3 dl)

 

Instructions:

  1. Peel the fruits and the avocado, rinse the kale in water

  2. Put everything in a blender (e.g. Vitamix, Nutribullet) or a hand mixer, and mix on high speed for a minute, serve immediately
